The Nelson County Board of Education Department of Nutrition Services plays a vital role for the school district and the education of our students.  By providing healthy meal choices and encouraging good eating habits, we play an important part in the development and education of all students in our district.

Improved nutrition has both the potential to positively influence students’ academic performance and improve student behavior states the USDA National Institute of Food and Agriculture, New Technologies for Ag Extension project and the Cornell Center for Behavior Economics research. 

Though researchers are still working to definitively prove the link, existing data suggest that with better nutrition, students are better able to learn, students have fewer absences, and students’ behavior improves, causing fewer disruptions in the classroom. Several studies show that nutritional status can directly affect mental capacity among school-aged children.

Because improvements in nutrition make students healthier, students are likely to have fewer absences and attend class more frequently.  Studies have shown that malnutrition leads to behavior problems, and that sugar has a negative impact on child behavior.  However, these effects can be counteracted when children consume a balanced diet that includes protein, fat, complex carbohydrates, and fiber. Thus students can have more time in class, and fewer interruptions in learning over the course of the school year. 

Some of the healthy initiatives adopted by our Nutrition Department include:

  • Over the course of the school week: less than 30% of calories are from fat, less than 10% of calories are from saturated fat and no foods with trans-fat are served
  •  Deep fryers have been removed from all cafeterias in the district
  • More fresh fruits and vegetables are served at both breakfast and lunch
  • Whole-grain products are incorporated into our menus
  • Primary cooking is done through the process of baking and steaming which helps in the retention of nutrients and lowers the need for fat to be added to foods
  • Sweets and desserts are limited in the menus

Every student has the potential to do well in school and the Nelson County Department of Nutrition Services has made it our goal to provide well-balanced, nutrient-dense food choices in our schools that will help set students up for a successful future full of possibilities!
