All Nelson County schools serve both breakfast and lunch. Meals are prepared by 62 food service workers who have been trained in rules and regulations, equipment use and care, nutrition education, safety and first aid, food preparation and merchandising, sanitation, and efficient use of resources. All employees receive additional training each year. All cafeterias in the district are accredited by the Kentucky Department of Education.
The high quality, nutritious meals served in the school cafeterias meet or exceed all state and federal guidelines. Lunches are designed to supply one third of a day’s required calories. The meal also supplies a third of the recommended daily allowance for protein, vitamins A and C, iron and calcium. The district’s food service director and food service employees have worked diligently to reduce fat content in district lunches. For example, apple sauce is used as a substitute for at least half the margarine called for in preparing baked items. Most of the schools have removed deep fryers and replaced them with ovens. More fresh fruits and vegetables have been introduced into the menus.
Over 260 hours are spent each school day preparing district meals, with food service workers preparing an average of 4,000 meals daily. The annual food service disbursements are more than $1.5 million. The most popular lunch item made from “scratch” in the school cafeterias is chili. The most popular ready-made item is pizza.
